meat roulades / zrazy / roladki



Ingredients:
beef chops (with no bone)- as many as many roulades You whant to make,
a bit of mustard,
1 large onion,
few pickles,
salt and pepper,
1-2 bay leaves,
2-3 whole all spice balls,
a bit of flour to coat,
some fat,
boiling water.

Beat chops, so they are quite thin and large. Season both sides of each chop with salt and pepper. Spread one side of the chop with the mustard (it can be thin, but mustard gives better flavour and helps while digesting fats). Slice onion in thin rings and cut pickles into 'strips' Put a slice of onion on the spreaded piece of meat (can be 1 ring, or a bit more :D, depends how much You love onion). Put a strip of pickle on the onion and roll the meat. You can use a piece of thread or a toothpick to make sure that the meat is not gonna roll out. Coat roulades with flour. Heat the pan (with a bit of oil) a bit and put roulades on. Add sliced onion beside meat. Fry meat until golden and then add the boiling water onto the pan. Spice the sauce with allspice and bay leaves. Lower the heat to cook the meat and enrich the sauce in flavour. You can add some more allspice and bay leaves ;) You can serve it with boiled potatoes and saurkraut.







Składniki:
kotlety z wołowiny b/k - tyle kotletów, ile zrazów,
odrobina musztardy,
1 duża cebula,
kilka ogórków kiszonych,
sól i pieprz,
1-2 liście laurowe,
2-3 szt ziela angielskiego (nie mielonego!)
odrobina mąki,
trochę tłuszczu,
1 szklanka lub 1,5 wrzątku.

Rozbij kotlety, tak żeby były w miarę cienkie i duże. Posyp pieprzem i solą z dwóch stron. Z jednej strony posmaruj musztardą (dla smaku ;), poza tym musztarda wspomaga trawienie tłuszczu). Pokrój cebulę w piórka, a ogórka w paseczki. Na stronie posmarowanej musztardą ułóż plasterek (nawet niecały, w zależności, ile ktoś lubi :D), a na cebulę połóż kawałek ogórka. Zwiń mięso, dla pewności możesz związać roladki nitką, albo spiąć wykałaczką. Oprósz roladki mąką. Rozgrzej patelnię (z odrobiną tłuszczu) i połóż na niej roladki i resztę pokrojonej cebuli. Smaż dopóki roladki nie będą złote, następnie dolej wrzątek i dodaj ziele angielskie oraz liść laurowy. Zmniejsz ogień i gotuj, dopóki mięso nie będzie miękkie, a sos bogaty w smaku. Można dodać więcej przypraw, jeśli wolicie.;) Podajemy z ziemniakami z wody i kiszoną kapustą.
